Hey guys, really quickly tonight, I just wanted to announce the winner of Alicia Simpson's Quick and Easy Vegan Celebrations:
Congratulations to Jessica, who apparently is winning all kinds of cool stuff lately! She wrote, My favorite holiday to cook for is probably something like the World Series or Superbowl. No pressure, fun snacky food, and beer! For the record, I love that answer! I don't often get a chance to celebrate sports games, but I did make vegan buffalo wings one year to watch the Superbowl with my friend. And anything with beer sounds good. There actually is a "Game Day Spread" in the cookbook with some awesome looking nachos and loaded potato skins.
I can't leave without mentioning these Toasted Coconut and Mango Muffins I made the other night from Isa's Vegan Brunch.
These were also a winner, though not a cookie. G said they tasted buttery, which is interesting. It's probably due to the extra tasty toasted shredded coconut mixed in. Also sort of interesting is the inclusion of both nutmeg and allspice, which I usually consider more autumnal spices - pumpkin pie and all that - but work really well here with the tropical fruits.
