salads + pho mostly

Hey, gearing up for the supposed blizzard over here, armed mainly with the harira from Tuesday. Other than that, here's what's been eaten lately:

                         roasted cauliflower and sweet potatoes in olive oil, s+p, and turmeric!

Would you believe this is the first time I've eaten pho?? Jarrod and I saw Polanski's Macbeth at Film Forum the other night and stopped into a Vietnamese place in the West Village. It was really good! Vegan options were limited but this was all we needed: broth, rice noodles, broccoli, bok choy, carrot, potatoes, soy protein, scallions, jalapeno, bean sprouts, and lime.

lunch was arugula, roasted heirloom carrots, sweet potato, fennel, and radicchio with a tomato vinaigrette from Paradis. It's been so long since I've gotten a meal from them. Still top notch.
Now I am going to go make sure I have enough coffee to get me through the next few days. Stay safe and warm!

Farmers' market, hot food and cold food

Been better about making and bringing to work my own breakfasts too these days (mostly some unappealing-looking oats in a jar, or fruit) but every once in a while I'll splurge and buy a bagel and some tofu cc. It's cheaper to leave the cc at work and spread my own rather than buy it at a coffee shop.

This was an indulgent version at home. OJ, coffee with almond milk, whole wheat everything bagel with Daiya cc. The Daiya was on sale and it's...okay. Texture-wise it's maybe closest to non-vegan cc, maybe flavor-wise too but I'm so used to Tofutti these days that I still prefer that. Definitely better than another vegan cc brand I purchased (can't remember which one at this point, and probably better left unsaid) which was super runny and gross. I'm a New Yorker, I have ideas about how bagels should be.

 a rainy Saturday morning I got into the city early enough to walk through the Union Square greenmarket. I've sadly not paid it enough attention lately.

Pretty colors, though, and still a good selection. I wonder how the harvest has been with the warm weather. I only bought an apple. maybe if I'm better prepared another time, I'll pick up more produce.

it's spinach, spirulina, tahini, ginger, frozen banana, almond milk, water, and lemon juice. I topped it with hemp seeds and drank it alongside my coffee.
Bought an eggplant a while back with no real plans for it. It finally has gotten freezing here (though that didn't stop Jarrod and I from biking to a movie Monday night. I won't say that cold wasn't painful.) so I took today off to gather some things together and make a soup that has been calling to me since I bought Isa Does It: harira! It's a moroccan chickpea stew. Isa's includes eggplant, lentils, and angel hair pasta.

This was really good! I finally was able to use the saffron my aunt gifted me last year for Christmas. The stew is also spiced with red pepper flakes, cinnamon, ginger, and paprika as well as fresh cilantro and mint thrown in. I ate it pretty hot so the subtlety of the spices was slightly lost on me, but I'm assuming they'll fill out as the soup sits a few days. As it was, it was filling and perfect for a cold afternoon lunch. Also, I think I have official cooked all but one of Isa's soups from that cookbook.
I did a lot of other prep today but I'm gonna save that for the rest of the week. TTYL kiddos.

soups, salads, smoothies, and Reno

I guess the best I can do these days is go though on/off phases of posting. Things have been pretty good around here in general, but busy and a little stressful. Trying to take more time to prepare meals, though.

A really delicious and filling lentil soup with ginger and parsnip along with the usual suspects (garlic, onion, broth, lentils, carrot, celery.) This bowl had a bit of bok choy tossed in too.

a smoothie! It's still warm inside, thank goodness. Spinach, frozen banana, cranberries, coconut flakes, Vega berry protein powder, almond milk, lemon, and water.

New Year, Same Old

Saw Bianca's post about Kite Hill vegan yogurts and had to try em. I was a big fan of the WholeSoy yogurts and was bummed when they went out of business. Luckily enough, found the Kite Hills were on sale.

J made a rainbow salad for us to eat before the New Years' midnight yoga class. We wanted something filling but not heavy. This had chopped carrots, beets, tomatoes, squash, cucumber, mung bean sprouts, and chickpeas in a mustard-avocado dressing. He also made little seitan nuggets to throw in for extra protein. It was good! We were out pretty late, though, so we did get hungry but this was good fuel.

 The meditation/letting go ceremony was nice: we wrote down on rice paper what we wanted to leave in 2015 and burned the papers and focused on what we wanted more of in the new year. The class itself was pretty light, but a nice, calm way to start off. We were in Murray Hill area, here is the Empire State Building all lit up after midnight.

The next day we holed up at a coffee shop and read for a few hours. I'm working through Dickens' Pickwick Papers.

Very little food in the house as the new year began - I went to Blossom's new to-go spot on 13th street for lunch on Saturday. This is their smoky avocado wrap with greens, avo, smoky tempeh, and a chipotle sauce. Pretty good, though I'd like to spend less money on food this year...

Sunday breakfast: Kite Hill peach yogurt with more blueberry granola, almond butter, and banana slices. Plus coffee!

                  more reading - Hax jumped on my lap and we had a quiet, warm Sunday together.
