Breakfasts Lately

The most important AND often most delicious meal of the day:

                        banana on its last legs, GF toast with Earth Balance and apricot jam

Soaked overnight oats with coconut flakes, cacao nibs, and protein powder. Seems like I added a little too much liquid.

Vegan pineapple-coconut muffin from a cafe/sandwich place in the hood, Norma's. The flavor was nice but a little too greasy and airy for my tastes. Points for vegan baked goods, though.

Beet-berry smoothie with strawberries, kale, frozen banana, and protein powder added.

  1. Breakfast is definitely the best meal of the day. All of yours look delicious! I love the oatmeal toppings, sounds like a really great combination of flavors. The muffin looks so pretty, too bad it was greasy! Your smoothie is such a beautiful color!!

  3. My most important meal of the day consists of tea and then coffee 90% of the time. :) That smoothie is SO PINK!

  4. It's amazing how much intense color beets add to everything — if you had just used strawberries it would have been pink, or maybe tan from the kale. I have to say, your banana's 'last legs' look a lot better than the poor banana I used in my smoothie today. Ugh.

    1. It definitely would have been pretty ugly, haha. There is even some beet color on my fingers in the photo!

  5. You never tire of Apricot Jam. Is there some specific brand you recommend?

    Norma's in the hood sounds pretty gangsta.

    Do you roast the Beets before adding them to Smoothies?

    1. I was actually thinking maybe I should expand my jam horizons. Raspberry? I'm not too picky about the brand - I usually pick up the low sugar kind from Trader Joes but this is Naturello brand, which is a little too sticky and sweet for me.
      I DO roast the beets - good question... The recipe (from Choosing Raw) says you don't have to roast them if you have a high speed blender, which I don't. Roasted, they blend up surprisingly well for me.

  6. You know, I fully agree. Breakfast is the best meal of the day. Adding cacao nibs is an amazing idea! Look at the gorgeous smoothie!!

  7. I have issues getting overnight oats just right too-which i'm sure has nothing to do with my inability to follow a recipe or measure....;)
    Love that smoothie! (Well, aside from the banana) i juice beets often and love the flavor they add.
    What kind of protein powder do you like? I usually buy amazing meal vanilla from the amazing grass people (off amazon) but am running low and ready to start smoothie season!

    1. mine was better when I didn't measure! Well.. I only measured the oats. The water I just eyeballed.
      Beet juice is so invigorating. What kind of juicer do you use?
      my protein powder is Garden of Life Vanilla chai. It's kind of pricey but it seems to be on sale fairly often at WF.

    2. I have a breville that is awesome- its usually $150 but i got on killer sale last yr for just under $100- aka 10 or so bottle of juice press ;) I've seen that garden of life- i'll keep my eye out for a sale since i'm not yet desperate.

  8. I confess, I am very bad at breakfast, only a soy latte for me, and maybe a cookie or toast… but I am great at lunches and dinners. I guess this is the Italian way :-)
