MoFo day 5: Potatoes + More Basil

Thank you, Joey. Shen, don't worry - I did not forget the potatoes.
Today's lunch:

Potato salad with basil, lemon juice, olives, onion and mustard.
Potatoes are another funny vegetables because they last through the winter and I eat them a fair amount with other roasted roots n' tubers at that time but they are also a pretty basic summer salad. This isn't my usual potato salad but it was solid.
Hasty post today, I know. Quick dinner too. Here also for yr viewing pleasure, dinner, using up more pesto. 


With Mary's Gone Crackers gluten-free black pepper crackers, zucchini (now in season at yr local Farmer's market!) and carrot sticks (also!)
What's yr favorite way to prepare potatoes? All of the ways? Me too!

  1. Yes, all of the ways, but especially sliced and grilled, or oven-roasted. I also love them made into hash browns or even boiled and mashed. I love potatoes, and am not above nuking one in a pinch, for almost instant gratification.

    1. Oh a hash! I always mean to do that and never do. There's a test recipe for Joni that includes a potato hash; I really oughta get on that.

  4. Totally impressed by daily blogging.
    Best potato dish ever i learned from a bon apetite mag- boil new potatoes/fingerlings until not quite done (like 5 min before done), then put drained ones nto oiled casserole dish and use your hand to lightly smash til the skin breaks. Add sprinkle of salt/pepper, drizzle with olive oil, i add rosemary. Bake at 400 for 20-30min, the skins get crispy but the inside is like baked potatoes. Super easy and delicious

    1. It's exhausting! Now I understand why you don't blog at all! It's hard enough to keep up with commenting, so kudos.
      I think I've seen that smashed potato technique before. Bet it's incredible.

  5. Oooh these meals look tasty. I love potatoes in every way. The best potatoes I've ever had were jacket potatoes in Ireland and Scotland. This was my pre-vegan days and they were so good. I should figure out how to make them so I can re-live that experience! I bet that pesto is a great dipper!

  8. Thanks for this lovely post on potatoes! I love potatoes and anything with potatoes. I love baking and frying potatoes mostly. I've never used basil in my potato salad, but I imagine it is very tasty with the other ingredients. I haven't tried the Mary's Gone Crackers before.
