Getting Through Groceries

Stopped by Trader Joe's last week and been eating my way through:

Crackers, bagels, gf bread, snack bars, dried unsulphured apricots, chocolate chips, low salt pistachios, cucumber.
Arugula, kimchi, tofu, avocados, light coconut milk, kalamata olive hummus, tomatoes, vegan cream cheese.
Arugula rules.
Everything bagel with vegan cream cheese, cucumber, arugula, black pepper.

I soaked and cooked some black beans. Here, with arugula, kimchi, avocado and tomatoes.
Awesome salad in bad lighting. Local heirloom tomato, avocado, cucumber, arugula, raw sunflower seeds, carrot, olives.
Overnight oats with almond Barney Butter and the dried apricots.


Breakfast at my desk:


Lunch at my desk. Still more arugula, black beans, cucumber and tomato. This time in a tahini sauce.

  1. We have the same kimchi but recently Dr. Michael Greger, whom I respect, wrote about negative research concerning kimchi — as in cancer, bla bla bla. Here's a link: http://nutritionfacts.org/topics/kimchi/ I don't know what to think.

    I used to have a basement office with no windows, and my walls were highly decorated, as yours is.

  2. Your workspace is so neat! Mine is so....frenetic. Thank you for always reminding me of the best stuff to get at Trader Joes; my fridge is also full of arugula as we speak!

    1. This was my first time with the Barney Butter. Not sure it's my favorite but it's good. I accidentally got "crunchy" though so maybe that was the problem.

  7. I love your desk area! And I love what you've been eating lately; all meals I would happily ingest. I'm struggling with "kitchen laziness" lately where I can't be bothered to spend more than five minutes on a meal. Can you just cook for me? ;)

    I don't have a window at my work either, so I look at the internet.

    1. I was surprised at how many meals I got out of the bag. And it didn't go bad either.
      Yes that's my hard workin' hand. Actually, in the picture above it, to the right (in blue) are our union banners! UAW 2179 represent.
      Was gonna do a "cube food" segment just for you. I guess this is the best yr gonna get.

  9. Darn! I'm going to miss Trader Joe's so much. I will be out of the country for several months. They have GF bread-are they vegan, too? And yes, I love pistachios, I need that for my flight soon. Salty and savory! I wish I can bring kimchi with me, but no, they will stink on flights, perhaps I can make some kimichi fried rice meal to bring with me since airplane foods suck. Thanks for sharing your lovely finds at TJs.

    1. Yep, the GF bread is vegan as well, though I think it might only be that variety. TJ makes a lot of stuff that would be great to bring on the plane. Lots of snacky packaged stuff.

  10. What a great haul!! I love Trader Joe's so much. I've been going there more than WFs lately. It's closer and they have some great stuff there. I'm so jealous you got those everything crackers! They are so good but I haven't been able to find them at mine at all! I never thought to put dried apricots in oatmeal, I bet that's really yummy!

      Dried apricots are great in oats. I like em better than raisins.

    Trader joes is just awesome. Your salads are so great looking, love the version with sunflower seeds.

    1. The raw sunflower seeds were another TJ purchase that I kinda forget about. Sunflower seeds can do wonders.
      The desk shot is at work. my desk at home is pretty similar though. And yea, the collage is constantly evolving. It's mostly just interesting or weird pictures I find in books at work.

  13. I am definitely the most jealous of that kimchi. All of our mason jars are packed away in storage for now (bad idea), or else I would totally be making some! Also, tahini sauce is one of those things that would be impossible to live without.

  14. Yum! I can't wait till the Austin Trader Joe's opens next month. I've never tried kimchi, but I want to! I'm kind of afraid of the jars sold at the Asian market...I'm a wuss about spice...but maybe I'll try TJ's version :)

    1. I'm surprised there isn't one in Austin already! A lot of kimchi I see at Asian markets isn't vegan anyway. They all seem to have fish sauce or anchovies, blech. But this one isn't super spicy and it's got a V(egan) seal of approval right on the bag.

  15. I envy you the kimchi - every brand I find over here has fish in it (grim), which is a shame as I like it more than most people I know.

    Also Barney Butter? Whaa? Is it dinosaur free?
