I saw this on Erin's post here, and I wanted it, so I made it. If only everything could be so simple.
My take on it:
Steamed kale, white beans cooked with pepper and rosemary topped with tahini dressing. Socca (based on that recipe - I left the shallots and olives out) on the side, with a few slices of FYH mozzarella. You all got me stuck on the vegan cheeses.
Sorry about the crummy photo; food bloggers must be the first to notice when the days start getting shorter. Well, maybe behind astronomers or something.
Haha I like the fake cheese label. The bowl looks yummy and I've been meaning to try socca! Just never have, wah! Sounds like a great combo though, how do you the cheese unmelted? Unmelted vegan cheese scares me a little.
ReplyDeleteHaha, there are a suprising (?) amount of posts under the tag. Socca's great and so, so easy! You'd probably like it! As for the cheese, it honestly wasn't great. It was supposed to melt, and it was okay warmish on the socca..but it'd probably be better under the broiler.

ReplyDeleteLike Sarah, I still haven't tried socca. But it looks really good. And it's a bread, so I'll like it, probably too much. I think FYH is kind of meh, but I like your idea of putting it under the broiler. That would probably help it out. I'm totally hooked on fake cheese right now too. Especially the melted kind on bread :)
ReplyDeleteYeah, it's super easy to make so I guess it's kind of dangerous to get in the habit of making, but it's a lot of fun. Fake cheese is not the worst thing to get hooked on...real cheese, for instance, is worse :)
DeletePossibly the one and only benefit of being a piano teacher, and thus working evenings, is that I make virtually all of my meals at lunch, so I`m not as attuned to the changing light as other food bloggers. :) I keep forgetting about socca! So good!

I've never had Dr. Cow but I've heard it's fantastic. FYH was the first vegan cheese I ever tried - I mostly used their cheddar for a long time. It really isn't bad, especially if you slice it thinly. It's not as texturally approximate as Daiya (those are the only two vegan cheeses I've tried) but I'm not too picky. It's okay if you mix it with other things...grilled cheese with tomato, for instance.

Nice looking bowl of food. I think FYH is OK, and I absolutely agree that the price of Daiya is prohibitive. I tried Vegan Rella recently though, and that stuff was pretty gross.

So weird, it seems like everyone started eating Daiya a lot all at once! Is it the wedge? I got on a kick, but yeah, I should lay off the vegan cheeses as well; they're sort of unnecessary (and pricey!)

Not as good as Daiya, but I'm not super picky. I'm in it for the flavor, mostly. (However much flavor mozzarella has - it's pretty tame.) If you try it, I recommend slicing it thinly.
