Threw a bunch of pretty much everything into a salad for dinner tonight. It was crunchy and fresh.
Spinach, roasted eggplant,chopped zucchini, carrot, cherry tomatoes, raw corn, tofu. With balsamic vinegar and black pepper.
More summer produce, nectarine:
I love nectarines so much, but haven't been able to get many this year. The organic ones have been so expensive & rarely went on sale. The peaches have been terrific, though! Still, I'm jealous of your nectarine.

I actually prefer nectarines to peaches because the fuzz does something weird to my mouth.. but they have all been really tasty this year for me.

DeleteI love summer fruit so much. They make the 80/10/10 diet seem almost doable lol. Your salads are always beautiful and I love how effortless it is for you to just throw them together and make perfect combinations. Yum!

DeleteYes, "everything salads" are great. I need to get some nectarines and/or peaches. I've been hesitant though because sometimes the quality is not what it could be, but I think it may be time to take the plunge since we are getting into the "season of mists and mellow fruitfulness."
