Wrong Holiday

Ever since Malin's gorgeous post about pomegranates, I've been trying to use them whenever I remember to. I considered making a spinach-walnut-pom salad with them for Christmas like my sister (who we missed this year because she's still in Spain) did last year but couldn't get everything together. I made a kale salad instead. However, still in a somewhat festive mood and with all necessary ingredients on hand (plus a couple extras) I made it for New Year's Eve:




Spinach, pomegranate arils, red onion, avocado, mushroom, tempeh in a mustard-balsamic dressing.
Then, ah, a bit too many sweets. Figs, chocolate, and banana bread! But this is the last gasp. I'm not making any food resolutions per se but G and I are doing a cleanse in a week or so, which I hope will get things off on a good start. Happy New Year's to yehs.

  3. From someone who is extremely full of sweets, that salad looks like just what I need. Poms are so intimidating; maybe I will overcome the pressure this year. HNY!!

  7. Happy new year! It'll be at least a month before I'm used to writing 2012, ha ha. Nothing wrong with figs, chocolate and banana bread on new year's. :)

  10. Mmmm, there's another one of your amazing salads. I'm not making any food or health related resolutions this year either. And I'm hoping it will lead to healthier long term habits. So maybe it's a resolution in disguise? Happy 1/1 :)

  15. Abby, I used to be pretty intimidated by them too but it's really not that big a deal. Ya get spurted, so what? I've heard opening them under water (in a bowl - not scuba diving) makes it cleaner and the arils just float to the top.

    Ingrid, tell me about it. I luckily hefted most of the treats onto others but the lingering ingredients are really the dangerous culprits...handfuls of dried fruit and chocolate chips at a time? Why not?? Oof.

    Allysia, I've decided to make things easier, I'm just going to relive 1867 and not write 2012.

    Thanks molly, I'm excited to do it. We'd start it sooner but my friend's birthday (at a bar) is coming up so we can't cut out alcohol just yet. Though after last night, I'd love to.

    Shen, still raw. I marinated some last week but didn't cook it. It's just not worth an extra 15 minutes of my time.

    Jenny, I feel like I've heard they have a sort of mystical fertility meaning associated with them. maybe that's why they're calling to you!
