What to Eat When There's Nothing to Eat

More of the same, that's what. Use up whatcha got.

Overnight oats, chia seeds, banana, Four Fruits preserves.
Then I went to the food pantry and honestly yelled at an old lady because she was getting grabby with the zucchinis. Cherry-Cashew Pure bar at work.
Lunch was leftover steamed spinach, sweet potato, and turnips with zucchini and scape dip from yesterday's dinner but I'm not sure that was an entirely good idea because I smelled intensely like garlic for the rest of the day. That was awkward.
I had planned dinner to be more crudite with scape dip (can I say it again?) and miso soup but G was hungry too and I made something more meal-like and less random-snacky:

More red cabbage salad with tomato, avocado, raw corn and dry-fried tofu cubes with some hot sauce.
Actually the best thing about having cabbage in the fridge is that you'll never have nothing to eat. A cabbage is forever.

Scapes and Taters

Yello! Or as Ghostface Killah says, YO YOW.
Breakfast: Twinings Chai French Vanilla iced tea, a banana, and 3 dried figs. (The tea is only recommended cold. Hot it tasted too artificial.)
Snack: Cherry Pie Larabar
Lunch: Salad with salsa (it only makes sense to combine the two since I always type "salsa" when I mean to write "salad.")

Snack #2: apple and a fresh-pressed green juice (spinach, romaine, celery, cucumber, apple, spinach, kale, parsley, lemon, ginger)
Dinner: steamed spinach, boiled turnips and sweet potato, crudites with Urban Vegan's garlic scape bean dip.

The garlic scapes I snatched up at Whole Foods because they were 4.99/lb because, as Dynise mentions, they usually run about $6-7/lb at the farmers' markets. I felt a little guilty about buying them there, but they were marked as locally grown. To make up for that, I used basil that we're now growing on the fire escape as the herb in the dip!
To be honest, I wasn't totally thrilled with the dip, though I had high hopes. The garlic scapes are still pretty intense in garlicky flavor. Don't get me wrong - I love garlic - but I wasn't expecting the taste. Maybe I also didn't blend the dip too well? Anyway, I might add lemon juice or nutritional yeast to the rest of the batch, or roast them a little if there's a next time. Lindsay and Lacey also gave me ideas to use the rest of the garlic scapes in a pesto, which sounds pretty great.
Have you guys tried cooking with these? Any other recommendations?
And in case you think me too fancy what with all these garlic scapes and crudites, let it be known I ate almost an entire box of crackers for dinner yesterday. There, I said it. It happens.

Oatmeal and Salad Plus a Cookbook Giveaway

Nothing special today, really. I was busy and it's too hot to be very hungry.
Breakfast was soaked overnight oats and chia topped with dried mango, kiwi, and banana.

I did some cleaning, some laundry, got some reading and writing done, cleaned for my friend, and got some groceries. The trip to and from the store was longer than the time I was in there. I didn't get much but there were a few things we did need, so oh well. Notably, I got salsa, which really made my (late!) lunch (like 4:30) really delicious:

Salad of romaine, spinach, cucumber, tomatoes, red cabbage, broccoli, hakurei turnips, and avocado. Topped with salsa and cilantro. I also had an illicit afternoon beer (Goose Island 312) with it to fuel a bit more cleaning, and, well, cuz I was hot. I had some chips and more salsa, too.

Now about that giveaway, to make up for the boring eats of today! I had mentioned I would be doing one soon, but that was a long time ago. Well, cleaning up today re-invigorated me for it. I'm giving away a copy of Alicia C. Simpson's Quick and Easy Vegan Celebrations. If you click on that link, you can see the Table of Contents, which is probably more helpful than me trying to describe what's in it.
I haven't made anything from it, but a lot of it looks interesting. There is a small middle section of some really beautiful photos of the recipes. I can't say if it's gluten-free friendly or not because I'm not too sure on what that entails. Maybe substitutions will be simple enough.

Taste the Rainbow (and a recipe)

As vegans and healthy eaters in general, I'm sure most of you are aware of the concept of "eating the rainbow," meaning eating foods of varied colors every day to get the widest spectrum of nutrients and vitamins. The new dietary guidelines passed back in March specifically mention this as a "good indicator of nutritional value." I'd like to think I usually abide by that.
However, in honor of last night's exciting news that New York passed the gay marriage bill (!!) I tried particularly hard to incorporate some rainbow eats (It's Pride Weekend here too.)
Breakfast was green:

Smoothie with spinach, frozen mango, banana, ice, 1 date, kiwi, coconut flakes, lemon juice, powdered ginger, and ground flax seed. This made two glasses about this size so I was full until lunch, save snacking on a couple of blackberries. Which I'm going to count as indigo.
Lunch was more Non-Greg Salad, which covered my green, red, and violet.
Dinner picked up the rest of the slack with a crudite plate with sundried tomato hummus: (orange, green, red)

As for yellow and the violet, which I thought I could have used more of, I made a red cabbage and corn slaw-salad.

I'm not a huge fan of cooked corn, mostly because of its sugar and starch content, but when eaten raw, not only is is delicious, it's counted as a vegetable. This salad is tangy, crunchy, and creamy due to the inclusion avocado. Basically, this salad is awesome.

Raw Red Cabbage and Corn Salad (serves 3 as a side)
1 ear of corn
1 1/2 c. shredded red cabbage
1/4 c. diced onion
1/2 avocado
2 TBS chopped cilantro
1 tsp Dijon mustard
1 tsp apple cider vinegar
1/2 tsp agave syrup

-Grate or scrape the kernels off of corn into a large bowl.
-Add red cabbage and onion.
-Add avocado and mix until creamy and blended.
-Add cilantro, mustard, vinegar, and agave.
-Taste for seasonings and add salt if necessary.

Serve as a side at a casual summer gay wedding! (Or wherever.) Happy Pride, and happy thoughts with my lovely fellow queers etc. Other states, where you at? Get with it.

Non-Greg Salad

Among his family (and perhaps beyond), G is known for his salads (oh, comics too, I guess.) The "Greg Salad" is always anticipated whether we host his family or visit them. In fact, I'm pretty sure it's one of the first dishes he and I made together. Before we lived together, I would make a salad for the week and usually change it up according to what I had or wanted but these days we typically make the same salad each time, a la his "stylo": Organic Girl 50/50, red pepper, broccoli, tomatoes, shredded beets and carrots, and cucumber. 80% of the time I eat a salad for lunch, it's the Greg Salad, maybe with a few extras thrown in. I'll give credit where credit is due. I've gotten numerous compliments on how healthy and colorful the salad looks. I think the beets have a lot to do with that (which is definitely his handiwork: I'm sort of afraid of my box grater.)
But G's not here tonight and there's no salad already made but I wanted a salad, so I made a big one for dinner and tomorrow's lunch and put in WHATEVER I WANTED. Ah, freedom.

This is romaine, broccoli, tomato, sundried tomato, avocado, cucumber, chopped beet, white beans, and red onion (cuz he's not here to deal with my onion breath). Topped with sundried tomato hummus, a little balsamic vinegar, and black pepper. I think it was especially tasty because I ate it out of G's bowl. Actually, that is key because a bigger bowl gives room for optimal stirring and mixage. Anyway, dining alone is no big - I just wish he were here to toss the salad for me.
So, as you can see, I get totally wild when I have the house to myself for the night. Now to burp a lot and dance around like a crazy monkey.
Do you all indulge in anything in particular when there's no one to call you out on it? Maybe you pull out fewer stops and just snack on whatever is around? Or do you usually eat alone anyway?

P.S. Greg, I ate the last of the coffee poppyseed cake for dessert. Told you I'm a bad ass.

Vegan Non-Food Stuffs

Today was...interesting. I woke up early to go to the food pantry this morning but before I did much of anything, I took note that I woke up on my own, rather than having my cat knead at me or start purring in my ear for food. When I looked into the living room, I saw her looking up at me quizzically with what looked like a little toy by her paws. But it wasn't a toy - it was a tiny dead mouse!
Gah. I've only had to deal with situations like this twice before but I do NOT do well. The first time actually involved me jumping cartoonishly up on a chair and yelping. The second time I made G do all the work. Both of those times, though, the mouse was alive in the beginning and still scurrying about but this time the little tiny thing was definitely dead. I stood stock still for about two minutes, wondering if I should wake G up to help me but once Haxan, my cat, started pawing at the thing again, I had to do something before she batted it away in a corner or I don't know what. So, shaking, I got the dustpan and swept it up, shakily opened the window and tipped the poor mouse outside. Oof. So, it was a natural occurrence and had to be done and I am more proud of my cat than sad for the mouse (though it was kind of cute - ack!) but I still feel weird. How do you all, as vegans, deal with mice or pests? Just wondering. Or maybe you don't have these problems. (By the way, our apartment is pretty clean and I've never noticed any mice living here. I'm not sure where it came from, but it must have snuck in from outside.)

She got a treat with her morning food but I didn't have much appetite after that. I did eat some overnight oats with chia, yogurt, blackberries, and jam because I knew I'd be out for a while. I went to the food pantry (more harukei turnips!), ran some errands in the city (including mailing out foodzines!), and came home to the UPS man just about to pull away! I caught him just in time, luckily. He was delivering my new vegan shoes!

These are Saucony Jazz made of canvas and hemp. This was sort of the final step in my vegan-ness. I never wear fur, probably own some wool, and actually rarely buy my own clothes new (I either get hand-me-downs or buy from the Salvation Army) but I figured since I was adding to the consumerist mess I might as well try to make a difference and buy something specifically vegan. Do you guys steer away from all non-vegan products that aren't food-related? Or do you not bother one way or the other?

Greens, Beans, and Beta-Carotene

I don't pretend to be a burrito maker extraordinaire nor to really understand the difference between a wrap and a burrito but I do know dinner was damn tasty.

This was loosely inspired by Amy's post. The top picture with kale and other creamy goodness (hers was avocado and refried pinto beans) was calling my name. I would have loved to put avocado in the wrap (burrito?) but didn't have any. Instead, I boiled a sweet potato, steamed broccoli and kale over it, whipped up a tahini sauce (!), and put whole navy beans into the wrap. Topped with cayenne and cumin.

Next time I will probably try to mash the beans a bit and heat them up with the spices but, seriously, this was so good as it was. Coulda had more kale, but I would say that even if I were eating my way out of a forest of kale.
Also, I resolve to always have tahini on hand. I am loving it with sweet potato lately.

Summer Salads

Haaaappy first day of summer. I wish I could have celebrated with a smoothie this morning, but I was out of spinach - which happens too often! I try not to buy too much at once because it gets slimy so quickly. Does anyone have any tips on how to store spinach? Anyway, berries and oats rang in the new season:

Overnight oats with chia seeds, banana, blackberries, and applesauce. Iced tea.
G was kind and got me a peach and an apple for snacks! I rarely eat peaches because I think I have a slight stone fruit allergy (the same thing happens with cherries) and they make my mouth itch! But it didn't happen with this peach, so, thank you, G, you're magic.
After the peach I had lunch, mostly leftovers from yesterday:

Mixed greens, chard, sweet potato, carrots, topped with homemade sundried tomato hummus. (I was actually making this hummus minutes before I left to meet my friend last night and ran out the door with chickpea juice on my fingers.) The salad was really good.
So good I had pretty much the same thing for dinner, after a short workout and shower (I reeeeally needed to sweat out some stress):

After looking at Shen's posts lately, I realize I rarely post my desserts. This is partially because I usually blog while eating dinner, and dessert comes too late to make the cut and partially because it's usually just an impulsive grab like a handful (or two) of chocolate chips or something. The last few nights, however, I haven't been feeling it (tonight included) despite leftover Father's Day coffee cake, plenty of dried fruit, jam and yogurt, applesauce, and chocolate chips. (Also unbaked cookie dough from the cookies of doom - but I ain't going near those.) I may skip dessert tonight but which would you guys pick? Do you usually eat dessert every night?
Speaking of Father's Day coffee cake - my mom sent me the pictures of the table! (And an awkward one of G and I that I am definitely not going to post.)

Cute little yard my folks have. Eating outside is so nice, I always forget. Minus the bees.
Anyway, screw dessert, bring on the beer. Tonight's is Brooklyn Summer Ale because now it is official!

That's a Wrap

Hot, hot day. I did manage to get a fair amount of work done today, though, which I'm happy about (sewing, cleaning, computer work, reading, groceries.) Unlike this poor lump who had to sleep alllll dayyyy to escape the heat of her fluff.

I had one of these to escape the morning heat:

Spinach, banana, frozen mango, kiwi, chia seeds, lemon juice, ginger, and coconut.
And one of these despite the evening still heat:

Whole wheat wrap with avocado, sweet potato, raw chard, and salsa.
Sierra Nevada Summerfest. Not as bad as most Sierra Nevadas.

Father's Day and Sugar Shock

Heyo. Happy Fathers' Day to none of my readers (unless you're a dad, then big ups.) I had a nice day. Church, making lunch to eat at the folks', a walk around their hood, some work at home, and now beer.
For lunch I made an orzo salad, like I've made a few times before. This one had basil, sundried tomatoes, navy beans, lemon juice, garlic, a little crumbled dried thyme, salt and pepper. I also made a kale salad with bell pepper, avocado, cucumber, red onion, red pepper flakes, lemon juice, and salt.
Seconds after making it safely to my parents' house, I dropped my bag and spilled about 1/8 of the orzo onto the sidewalk! I am such a klutz. Luckily, there was enough that was salvageable and, hey, at least the ants got some too. Anyway, the spread was then supplemented with cold roasted beets and fresh tomatoes that my mother had already. She also heated up some (naan-vegan) naan for my dad, herself, and G, who so kindly came along (sorry for stealing your son for the day, Ken!) We ate outside in the sun and I actually did get a few shots of the whole table but they're on my mom's camera. Maybe she'll send them to me some day.
Here, anyway, is the leftovers I had for dinner:

I also served up Hannah Kaminsky's Poppy Seed Coffee Cake from her new Vegan Desserts. She writes that it's perfect for a Mothers' Day brunch, but I decided to gender-cross a bit. Plus I call my father Poppy, so I though it was cute. I don't own a tube pan, so I baked it in a springform pan, which I think had something to do with the cake being a little undercooked, but it was still tasty. I love the crunch of the poppy seeds. I only wish the coffee flavor were a bit more pronounced.

And, not exactly related to today but another baking endeavor: I made the Bakery-Style Crispy Chewy Chocolate Chip Cookies from Kelly Peloza's Vegan Cookie Connoisseur last night for no good reason, really. G says they're the best chocolate chip cookies I've ever made and I, well, I didn't say much of anything because I had to fall asleep almost immediately after eating one. I usually cut back on both sugar and oil in recipes but sometimes that backfires on me, so I just stuck with the recipe on this one and I kind of regret it. I'm glad G likes them because I cannot handle that much sugar.


Do you guys usually follow recipes to the letter on the first attempt?

Breakfast and Dinner

I used to read Kath's blog a lot and was always astounded by her major oatmeal breakfast undertakings. One of the things that stuck with me, as a carbophile, was her crumbling of a muffin on top of the oats! While I wasn't sure my stomach could handle that, I did make good use of the Happy Herbivore Blueberry Oatmeal muffins I baked the other night.

On top of more vegan yogurt: raspberries, banana, flax seed, pumpkin seeds, and the crumbled muffin.

THEN SOME OTHER STUFF HAPPENED! (Like work, the rest of the macro sushi, a really small salad, and two sips of G's coffee).
For dinner I made the pea dip again (funny now that I realize it was originally Kath's recipe too!) and rolled it into some chard wraps.

With carrot, mushroom, red pepper, pea shoots and tomato. Sometimes I feel like I'm eating a jungle. And I like that!

Farm Fresh

Hey guys, sorry I've been a bit absent lately. I've been kind of busy and it was another night out tonight - G and I just got back from seeing Midnight in Paris, the new Woody Allen movie. It was a bit of a long day because I've started volunteering at a food pantry on Thursday mornings before work. I actually got my position through Just Food, which is a great, great organization that brings local fresh farm vegetables to urban and underprivileged communities. My job is to be a Veggie Educator, meaning I stand by the selection of vegetables we get each week to talk up the vegetables (yes, fellow vegans, some people will snub fresh vegetables in favor of canned tuna!), describe how to wash, keep, and use the vegetables, and basically answer any other questions that the people coming in might have about them. This was only my second week so I'm still getting a feel for things but I'm really excited about the potential and I'm ridiculously happy to be talking about vegetables and helping other people get fresh food that they might otherwise not have access to.
Anyway, I powered up this morning with vegan yogurt (yes it is under there):

Fresh raspberries, sliced banana, raw wheat germ, Four Fruits jam and pumpkin seeds on top.
I had an Amazing Grass Berry bar as a snack once I got to work at around 12:30, and ran to Whole Foods on my 15 minute lunch, which is all I get on Thursdays with this new schedule (SHEN). I grabbed (literally) some macro sushi (I've talked about it before) and spinach but these also caught my eye:

Does anyone know what those are? I do - only because just this morning, I was handing these out at the food pantry! Any guesses? They are Japanese Salad Turnips, otherwise known as hakurei. They are smaller and sweeter than normal turnips, and much more tender. They can be eaten raw and don't even need to be peeled. I would compare them to radishes, maybe, with less of a bite. Anyway, they are crisp and refreshing and something different. They are also about as pale as I am. I bought these at WF, which may sound ridiculous, but I was looking forward to taking some from the food pantry but would much rather the people who needed them got them. Plus I can afford the 1.99 for a bunch. And if you can, too, and see them, I recommend you give them a try! Check yr local farmer's markets - I'd actually be interested to hear where they're available.
Anyway, when I got home, I quickly made dinner, inspired by the fresh farm vegetables!
I had picked up more rainbow chard at our farmer's market on Wednesday, along with some pea shoots! I made chard wraps with some sliced hakurei on the side.

So. Are any of you part of a CSA - or even if you aren't - What is the most interesting vegetable you've gotten? What about your local farmer's markets - what is the selection like, or do you even have one? I'm really curious!
The food pantry I work at is church-affiliated and there was a short prayer before the doors opened, and one or two things stuck with me: Bless this bounty, and we wonder at Your goodness. Truly, truly, this earth is good. Let it continue to be so! (Go vegan.)

Two Asian Dinners

Yesterday was udon noodles in a bit of miso broth with steamed broccoli, edamame, and mushrooms with chopped garlic and ginger. Easy and super tasty. I just need to buy some srirhacha!

And tonight, obviously take out, but tasty - brown rice rolls with spinach, avocado, and cucumber.

A Very Wheaty Lunch and Snack

You gluten-frees might want to avert yr eyes.
Lunch was tabouli over greens. I used the recipe from The Candle Cafe Cookbook, mostly because I am beginning to feel really guilty about never using the majority of my cookbooks. It was tasty though I might have liked a version with cucumber in it.

I think I've actually only made tabouli once before and then, I used quinoa. I had no idea you don't even need to cook the bulgur wheat! You just pour boiling water on top of it and let it sit.
Afterwards I had a bowl (okay, two) of plain soy yogurt with Bonne Maman Four Fruits preserves and some raw wheat germ on top.

I love, love Bonne Maman jams but they are pretty expensive. On a walk yesterday I happened upon a health food store where all flavors were on sale for 2.99! So of course I bought some. Exercise does pay off! The raw wheat germ was given to me by my mama a while back. I think it was a remnant from when my sister was living with them over winter break.
Speaking of, I stopped by my parents' house this afternoon to see my sister and say goodbye for a while - that globe trekkin chica is on her way to Argentina for a month, lucky girl. AND while I was there, my mother had left a "half birthday" present for me that my sister had picked out: a dehydrator! Gah! So I have a question for some of you more raw experienced folks: can I leave it running while I'm asleep or not home, or is that not safe? What if I have an inquisitive cat?
Also, one more thing. I mentioned my growing, guilty collection of cookbooks and a sweet gift from my family. I'll probably be doing one or two cookbook giveaways in the near future but I haven't decided yet on which ones. I'll keep you posted.

Why I'm Crazy: A Play in 3 Acts

9 PM on a Friday night, about 88 degrees in a just-cleaned Brooklyn, NY apartment

G: [Smacks lips] "What do I have to do to get you to bake something?"
M: "Why! What do you want me to bake? I was thinking of baking something!"

M goes to kitchen, sits on floor browsing cookbooks for 15 minutes. Re-enters living room.

M: [Glumly] I'm not baking anything. It's too hot and I just cleaned the kitchen for the night.
G: [Sighs] Okay.
M: I MEAN UNLESS YOU REALLY WANT ME TO! What do you want me to bake?? SHOULD I MAKE COOKIES? Okay, on a scale of 1 to 10, how much do you want cookies?
G: 10.

Cut to M, in kitchen, sweating, stirring, possibly swearing and saving preheating the oven for the last possible minute.


Lemon-Poppyseed cookies from Kelly Peloza's The Vegan Cookie Connoisseur. G had about 3 last night and I brought the rest in to work. They were gone by the end of the day, so I guess they were good.
