A Quite Tolerable Day

Anywhoozles, Happy Memorial Day. I hope everyone grilled up, like, a half a horse and seven all-ham beefburgers in honor of the dead. I'll stop being an asshole because this weekend has been nice.
Kiki Smith at the Brooklyn Museum was great, though I like her installation pieces more than the sketches. People in NY should go check her out. I'd like to get out there more often.
We fueled the morning with coffee and organic bananas, which I'm convinced taste better than conventional bananas - moreso than organic fruit usually does but it might just be that without pesticides and stuff, they ripen quicker?
Post-Museum was fueled with a bit of an anomaly in that we ate out. It was a nice change of pace, especially since we got tacos at a Mexican place and I never bother to make that type of stuff for myself. Chavellas, I think the place was called and it was really pretty tasty. I got a roasted vegetable taco, which had squash, mushrooms, peppers, lettuce and guacamole.
When I got back I had some applesauce with wheat germ and walnut pieces, an iced coffee and headed out to make copies of Umlaut 12. I also picked up some groceries for dinner: Rudi's organic Whole Wheat bread, baby spinach, jalapeno hummus, some um dark chocolate because I couldn't help it, and vegan cheese (also weird, I know).
Hence dinner:

Half of a hummus, tomato, spinach, and cheese sandwich and a small(?) salad of spinach, cucumber, sprouts, and carrot just to get more vegetables in. The sandwich was really tasty; it would have been better with onion on it...I'm glad I did dinner like this, though: it was light, and I usually make a whole sandwich and end up piling way too much stuff on it and then it falls apart. Also pictured is a Sam Adams Blackberry Witbier which, while tasty, did not taste like blackberry. Don't worry, Greg, I got it covered. Then I worked a little for Umlaut Lucky 13 and scanned through cookbooks and Robert Paarlberg's Food Politics. It looks interesting but I can't give it too much time right now. Right, Mr. Norrell?

Enough for now. I went for a nice run this morning so hopefully breakfast will be light with not too much coffee. I'll put pictures of the rest of the day up later if I can. Have a lovely one; it's nice out.

Farmer's Market Freshhh

My momma gave me some rhubarb the other day and I was intent upon using it, and using it properly despite my calling it "rutabaga" every time I say it. No, I did not mash it up nor roast it or whatever rutabagas are used for. I was a proper young lady (like I do) and boiled it up with some ginger chunks and strawberries that were going to go bad to make a compote.

It looks like some sort of biology slide, doesn't it? Microbes and silica or siliae or whatever the fuck.
And here is how I ate it!

This is both my breakfast and lunch for that day. Breakfast is oatmeal with the compote and black iced coffee. I must mention that rhubarb is a natural is is coffee. So this was really a breakfast of champions. In case you don't know, rhubarb is also pretty bitter, so I think I added some agave syrup on top of the oatmeal as well. I had forgotten about the ginger chunks, but they were nice.
The salad looks pretty sad, just being spinach, chickpeas, and carrot sticks but I had alfalfa sprouts and cherry tomatoes in the fridge at work, so I added those later. I hadn't thought about dressing but there was a random bottle of apple cider vinegar in the fridge too (sorry whoever's that was) and I put some black pepper on top.

Works for me.
I just baked more ginger muffins. Cool.
Cooler? I finished Umlaut # 12! I know no one reads this, but if someone from somewhere stumbles upon this and wants a copy of a food zine, git at me. I'm pretty happy with this one.

Back to Baking

Wahoo new computer and man does it work quickly.
I have a backlog of things to show you, but for now: today.
Breakfast was oatmeal with banana and shaved unsweetened coconut. The coconut flavor was pretty subtle, and yes, I could have added more but I didn't. Honestly, anything I could have done would have only been pathetic in light of the previous days breakfasts: Mango, banana, and coconut. Oh man. So good. I wanted to buy a mango again today but I guess I forgot to look. These bananas were organic and so, so delicious. Like melting candy.
Anyway, then I went grocery shopping, a bit unnecessarily, but I did really need a few specific things. I went to Trader Joe's and then a market close to home. I at least got a good bit of walking in while traipsing around.
When I got home, I had the last of my salad - would you believe I never thought to do it, but I made a big salad the other day to eat for the next few days. Usually I just make one serving at a time. This is so much easier and a real time saver. It is also Greg's influence. Smart boy.

This is greens mix, cucumber, green beans, broccoli, carrot, onion, tomato, more freakin' capers and crumbled tofu and green beans with the last of TJ's cilantro-jalapeno hummus. This was really, really good.

After this, I made ginger muffins. It's been a while since I've baked. My roommate made ginger ale the other day, of all things, and had a pound of leftover grated ginger and nothing to do with it.

I love ginger and this was really spicy and good - he cooked it with a ton of sugar and actually cut a green chili pepper into it - but the best thing about this stuff is the weird little ginger hairs! Ha!
Sooo I loosely, loosely based my recipe on one for ginger muffins in The Joy of Vegan Baking by Colleen Patrick-Goudreau. I didn't add any more sugar since the ginger was cooked in it but I chopped in an apple for a little more sweetness and to complement the ginger, I didn't add any oil because I don't like it, and I figured the moist ginger would also take the place of that...some other stuff. I think the lemon seeds that got into the mix particularly lent something to the taste.

They are definitely not very sweet, but I'm glad I didn't add more sugar. I like healthier tasting muffins and these would be good to save and eat for breakfast for something quick and easy. I topped mine with honey and ate two. But that's okay! Healthy!

Hey. I haven't been updating for a few reasons; my newest excuse is that my computer is mad old and hardly has space for photos on it for me to update with. I have been baking a lot, or had been: after all there was Earth Day to celebrate, Saturday mornings at work to tolerate, spare time to revel in, sweet teeth to placidate, etc. Here is one of the products, made for a lazy Saturday. People liked them. They are the recipe for scones from The Joy of Vegan Baking, into which I added chocolate chips, dried cherries, and blueberries.
I will get more photos up when there is more space on my computer.

I've been eating a lot; too much, really, but I went shopping today and pretty much stuck with what I needed. Trader Joe's really has a way of sucking you in, though. Splurges there were Kashi Heart to Heart, Cilantro-Jalapeno creamy hummus, and two Fiberful bars. I also got dried Mission figs, which I don't consider a splurge, really, but I do go a little overboard with dried fruit. And figs are particularlly dangerous if you eat too many of them. Ahem. Especially when they follow my lunch: salad and this tempeh "tuna-ish" salad I've made a few times. I don't buy vegan mayo and I can't find kelp flakes, both of which are in a lot of no-tuna recipes I see, so I sub in capers (both to use them up - I have NO clue why I bought them - and for a briny sea taste) and tahini (which isn't all that healthy but is ingredient-wise way more clean and simple than vegan mayo. It's also mad cheap.) I threw in celery and mustard as well. I didn't have either lemons or onion on hand, but if I had, I'd have added those too. It was good. Doesn't look like much.

Also, Burbs is coming over in a bit. We are finally going to attempt the homemade ice cream. I will take photos and he is going to make a comic about it: I am also going to pick up a new computer soon, so hopefully I'll be updating more regularly. I also edited in the photo of the cornmeal lemon poppyseed biscotti from the last post.

EDIT: Here is the strawberry ice cream we made! It least interesting to attempt. Yay science! I still have it in my freezer since I don't eat milk products so if someone wants to eat it and review it... It's there. Even Greg didn't eat much of it but STAY TUNED FOR HIS COMIQUE (french accent)
